Merry Xmas to All
Well, I can’t believe it is that time of year already. We are peeking at 2011! Where has the time gone? I hope everyone is all ready for Xmas and Santa’s big day. There is always an abundance of good food, good drinks and great company to share with. With that in mind, I have put up one of Todd’s receipes that you may find interesting to try over the holidays. Frosty Family Walks and Foods for Moods

One of my favourite things to do any time of year, are oven roasts. A family classic ever since I can remember. Where to this day I still keep on my “at home menu”, adding little unique touches here and there to this classic, is one of my favourite things to do. What makes this recipe “holiday savvy” is a touch of Orange zest to at the end, mmmm how festive.
Neighbourhood walks were routinely a part of our post dinner ritual & upon reflection, the value of spending time with family in a “non rushed” fashion went far in making the holidays and any family evening memorable.
Oven Roast Vegetables
1-2 large parsnips
1 Large sweet potato
1 Large yam
6 Small golden and or small red beets
½ of a Garlic bulb
1 medium sweet onion
½ package of fresh rosemary
Zest of 1 organic orange
Toss the above in a large bowl with Extra Virgin Olive Oil before layering in a large baking pan.
Preheat oven 425 F.
Bake for 25-35 min, until vegetables are golden and crispy
Drizzle honey, zest 1 Organic orange and finish with a dash of salt, pepper.
